Homemade Potato Chips

you have too much time on your hands...

Ingredients
- unpeeled medium potatoes - think about 1 potato per person
- 2 quarts ice water
- salt
- pepper
- Oil for deep-fat frying
Instructions
- Use a mandolin or a food processor fitted with a crinkle cutter. Cut the potatoes in thin slices, and cover in a bowl of ice water. Soak for at least 30 minutes, then drain, cover with a towel.
- Add at least 1.5 inches of peanut oil to your frying vessel of choice and bring the oil to 375.
- Using a spider (open weaved metal dipper) gently lower the potatoes into the hot oil. Fry until golden brown, stirring gently so you do not splash the oil. Remove to paper toweling and sprinkle with salt and pepper. Eat today! Work in batches until you are done.
