Sometimes these old photos are cringe. The scallops were good though.
Crispy Scallops in a Wine Butter Sauce
Yield: 4 Servings

Ingredients
- scallops
- 1/2 cup all purpose flour
- 1/2 cup panko breadcrumbs
- salt and pepper
- 1/2 cup white wine
- 1 tablespoon butter
- 1/2 cup buttermilk
- oil for frying
- 1 tablespoon fresh chopped chives optional
Instructions
- Swill scallops in buttermilk,
and drain. Place flour, panko and spices in a ziplock bag, shake to mix.
Place scallops in bag, a few at a time and shake to coat completely.
- Heat pan to medium high, saute
scallops until a good brown develops. Once cooked, remove scallops to
paper towels.
- Add wine to the pan and scrape
up bits. Add butter, and simmer until reduced by half, about 3 minutes.
Add scallops back to pan and spoon sauce over, sprinkle with chives if
using.
- Serve immediately
