Mini Cheesecakes with Caramel Drizzle

Ingredients
- 1 stick melted butter
- 1/4 cup sugar
- 1-1/2 cups graham cracker crumbs
- 2 8 oz packages cream cheese (softened)
- 3/4 cup sugar
- 1 tsp vanilla
- 4 egg whites
- 6 tbsp caramel topping
Instructions
- Heat oven to 350. Using food processor finely crush graham crackers. Combine crumbs melted butter and sugar, mixing well. Press into mini cheesecakes forms.
- Filling
- Beat cream cheese with mixer until smooth. Blend in sugar, and vanilla. Beat in egg whites, one at a time just until well blended.
- Pour into prepared pans, dividing evenly. Bake until set, remove from the oven and allow to stand for 10 minutes.
- Drizzle with caramel and serve chilled.
