Salmon and Spinach Bake

This
wasn’t the prettiest thing to look at, but it did taste good. At some
point I will re-work this recipe as it didn’t quite turn out as I
desired. I also frequently freeze individual pieces of salmon with butter
dill already on them.
Salmon and Spinach Bake

Ingredients
- 1 salmon filet per serving
- 1/2 cup panko bread crumbs
- salt (pepper, garlic)
- 1/2 cup packed baby spinach per serving
- 1 small red onion (sliced (amount varies, don’t overpower dish, but enough to taste))
- Butter
- dill
Instructions
- Wash and spin spinach, place in individual baking dishes.
- Mix slightly softened butter will dill, set aside.
- Mix oil, panko and seasonings directly in the measuring cup.
- Assemble; place salmon filets on top of spinach beds, slather with the butter dill mixture, and top with panko bread crumbs. Bake at 400 until salmon is done, about 10-15 minutes.
