Balsamic Pot Roast

 

Tender balsamic pot roast slow-cooked to perfection with rich flavors of balsamic glaze, garlic, and herbs—an easy, hearty, and delicious comfort meal!

Ingredients

 

  • 2–3 lb. beef chuck roast
  • 1 1/2 teaspoons garlic, minced
  • 1 onion, sliced thinly
  • 1 cup beef broth
  • 2 tbsp brown sugar
  • 1/2 cup balsamic vinegar
  • 1 tablespoon soy sauce
  • Salt to taste

 

Directions

 

  1. Preheat the oven to 350.
  2. Season the roast with salt and pepper, and using a cast iron skillet preheated to medium high, sear the roast on both sides, then turn off the heat.
  3. Mix the remaining ingredients together, blend well, then pour over the meat mixture and tent with foil.
  4. Bake for 3 hours. Once cooked, shred the beef with forks and serve.
  5. If you would like to use a slow cooker, by all means do that.

Not much to say, except you need to try this.  Also, try using some pappardelle, it's delicious!
