Blue
cornmeal is simply cornmeal with more protein and is from a variety of corn
that is usually grown in New Mexico, and is supposedly easier to digest. Recipe adapted from Fifteen Spatulas.
Blue Cornmeal Cornbread

Ingredients
- 3/4 cup butter, room temperature
- 1/2 cup sugar
- 3 large eggs, beaten
- 1-1/2 cups milk
- 2 cups all purpose flour
- 1 cup blue cornmeal
- 4 tbsp baking powder
- 1 tsp salt
Instructions
- Preheat the oven to 400.
- Using a hand blender, cream the butter and the sugar for about 3 minutes.
- Whisk the eggs and milk in a bowl, until blended.
- In another dry bowl, blend the dry ingredients together. Start blending the liquids slowly into the dry mixture until everything is used. Do not overmix - this part is best done by hand.
- Pour the batter into a greased 9x13 pan and bake for 20-25 minutes until you see the top browning very slightly. Because of the color of the cornbread, it's a good idea to use a knife or toothpick inserted to test for done-ness.
