Ingredients

  • 3 whole Bananas
  • 1 bsp Milk
  • 1 tsp ground Cinnamon
  • 1/8 to 1/4 tsp fresh grated Nutmeg
  • 8 tbsp butter - 1 stick
  • Unsalted Butter (room temperature save the wrapper!!)
  • 1 cup sugar
  • 2 large eggs
  • 2 cups All-Purpose Flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt

Streusel Topping

1/3 cup All-Purpose Flour

1/3 cup dark brown sugar

1/4 tsp cinnamon

4 tbsp unsalted butter

A pinch of salt

1/3 cup chopped pecans

Instructions

  1. Preheat oven to 350.  On a parchment lined baking sheet, place the PEEL ON bananas and bake for 15 minutes.  Reduce the oven to 325, remove the bananas to cool enough to handle.
  2. Butter a loaf pan, set aside.  Cream the butter and sugar in a mixing bowl until fluffy.  Add the eggs one at a time and beat well after each.
  3. In another bowl, mash the bananas with a fork, add the spices, mix well.  Then add in the milk, blending all ingredients completely.
  4. In your dry bowl, mix all the dry ingredients with a whisk.  Slowly add the dry mixture to the wet mixture, and stir gently until all the dry ingredients are incorporated.
  5. Pour the batter in your prepared loaf pan, and bake for 30 minutes.
  6. At the 30 minute mark,  prepare the streusel by combining the ingredients listed, then cut in the butter.  Add the chopped walnuts and toss the mixture.
  7. At the 40 minute mark, sprinkle the topping over the bread, and bake another 20-25 minutes until a toothpick inserted comes out clean.
  8. Set aside on a rack to cool before cutting.
