We really enjoy spicy chorizo…for breakfast. There isn’t much to this recipe, but if you need it
Chorizo Breakfast Chalupas

Ingredients
- Chalupa shells
- Refried beans
- Eggs
- Pork Chorizo (bulk or if in casing, remove and cook)
- Avocado slices
- cilantro for garnish
- Salsa Verde
- 1 tbsp butter
Instructions
- Cook pork sausage until done. Scramble eggs (1.5 per person).
- Warm the refried beans in the microwave for about 2 minutes.
- In another non-stick pan, melt the butter and scramble your eggs.
Assembly:
- Spread refried beans on
chalupa shell, top with chorizo, followed by scrambled eggs, and top with
thin slices of avocado. Garnish with cilantro to taste.
