Potato Nachos

Ingredients
- One large russet potato, sliced 1/8 in thin
- Sour Cream
- Green Onion
- 1 cup cheddar cheese
- salt and pepper
Instructions
- Place the sliced potatoes onto a parchment lined baking sheet, sprinkle with salt and pepper. Bake at 400 until starting to crisp up - about 15 minutes. Add the cheese and continue baking until melted.
- Use your favorite toppings.
