Ingredients
- 1 pound large shrimp, peeled, deveined
- 1 lb. fresh fettuccini
- 3 tbsp olive oil
- 1 tbsp butter
- 3 garlic cloves, chopped fine
- 1 medium onion, diced
- 1 can diced tomatoes
- 1 cup white wine
- 1 tsp dried oregano
- 1 tbsp fresh parsley
- 3 tbsp fresh basil leaves, sliced (chiffonade)
Instructions
- Clean, peel, and devein the shrimp and rinse several times until the water runs clear.
- Place the shrimp in a medium sized bowl with salt and pepper and the red pepper flakes.
- Heat a skillet over medium high heat using 1 tbsp olive oil and 1 tbsp butter. Add the shrimp, and sauté for about 3 minutes.
- Add the onion, and continue to cook for an additional 5 minutes until translucent. Add the oregano and garlic and heat through for about 1 minute to allow the spices to bloom and add flavor and fragrance. Add the wine and enjoy that sizzle, and allow to cook for about 2 minutes for the alcohol to burn off.
- Add the tomatoes, and simmer until the sauce thickens slightly. Adjust for salt and pepper as desire
