Roasted Shrimp with Garlic

Ingredients
1 lb medium shrimp, peeled and deveined
2 tbsp olive oil
4 cloves garlic, minced
1/4 cup parmesan cheese, grated
Salt, pepper, and fresh parsley for garnish
Lemon for garnish
Instructions
Preheat the oven to 400 and line a baking sheet with parchment. Place the shrimp in a bowl, and drizzle with olive oil, salt, pepper and the garlic. Toss to coat evenly.
Layer the shrimp on the parchment and sprinkle with some parm cheese, then bake for 10-15 minutes until the shrimp and firm and cooked though. Garnish with additional parmesan cheese and perhaps a squeeze of lemon.
Serve with a salad and Fried Goat Cheese
