Chicken, Tomato and Orzo Soup

Ingredients

 

  • 1/2 lb. chicken breast or tenders, sliced
  • 2 tbsp olive oil
  • 1 onion, minced
  • 3 large garlic cloves, minced
  • 3-4 small tomatoes or 6-7 cherry tomatoes
  • Salt and fresh cracked pepper
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon crushed red pepper flakes
  • 1/2 cup orzo
  • 4 cups chicken stock
  • Fresh chopped basil, for garnish
  • One Jalapeño, sliced, for garnish

 

Directions

 

  1. In a 3 quart saucepan, add the onion and 1 tbsp of olive oil. Cook until onions are translucent, then add your garlic, crushed red pepper, and seasonings and cook for one minutes.
  2. Add the chicken stock and bring to a boil Add the orzo and cook for 10 minutes until the pasta is thoroughly cooked.
  3.  Adjust seasonings with salt and pepper, add your shredded / sliced chicken tenders and garnish with basil and very thinly sliced jalapenos.

Notes:

The original recipe called for a small jar of sun dried tomatoes, when I went to open mine, the lid did not POP as it should have.  Being a fanatic about food safety, I tossed it and improvised. 

 

I did not add heavy cream.  I simply didn't like the sound of it - but the soup turned out fantastically - and I can't wait to have it again soon!
