** The original recipe called for a small jar of sun dried tomatoes, when I went to open mine, the lid did not POP as it should have. Being a fanatic about food safety, I tossed it and improvised.
I did
not add heavy cream. I simply didn't
like the sound of it - but the soup turned out fantastically - and I can't wait
to have it again soon!
Chicken, Tomato and Orzo Soup

Ingredients
- 1/2 lb chicken breast or tenders, sliced
- 2 tbsp olive oil
- 1 onion, minced
- 3 large garlic cloves, minced
- 3-4 small tomatoes or 6-7 cherry tomatoes
- Salt and fresh cracked pepper
- 1 teaspoon Italian seasoning
- 1/4 teaspoon crushed red pepper flakes
- 1/2 cup orzo
- 4 cups chicken stock
- Fresh chopped basil, for garnish
- One JalapeƱo, sliced, for garnish
Instructions

In a 3 quart saucepan, add the onion and 1 tbsp of olive oil. Cook until onions are translucent, then add your garlic, crushed red pepper, and seasonings and cook for one minutes.
Add the chicken stock and bring to a boil Add the orzo and cook for 10 minutes until the pasta is thoroughly cooked. Adjust seasonings with salt and pepper, add your shredded / sliced chicken tenders and garnish with basil and very thinly sliced jalepenos.
