Fish Florentine

Ingredients
- 4 oz filets of a white fish, halibut, tilapia, etc.
- 1 tbsp extra virgin olive oil
- 1 tbsp salted butter
- 1 red bell pepper, chopped
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- 9 ounces fresh baby spinach
- 2 ounces cream cheese
- ¼ cup half & half
- 3 tbsp parmesan cheese, grated fine
- kosher salt
- fresh black pepper
Instructions
Spinach: Start First
- In a large skillet on medium heat, add a spray of olive oil and 1/2 tbsp of butter. Bring to heat and add the bell pepper, and garlic, cooking for about 4 minutes.
- Add the spinach and season with salt and pepper. Stir around until the spinach has wilted.
- Add the cream cheese, half and half and the parmesan cheese. Stir frequently to combine, and use the back of a spoon to smash out the cream cheese if necessary. Turn heat to low while the fish cooks.
Fish
- Heat a medium skillet on medium heat, and add the remaining olive oil and butter.
- Season the fish by sprinkling with salt, pepper, and some smoked paprika. Cook for about 6 minutes on the first side, flip and cook for an additional 5. Make sure you fish is cooked through and it should be flakey and moist.
- To serve, plate the spinach and cream cheese mixture and place the fish filet on top.

Notes:
We have made this dish at least 20 times, and every single time it's perfect, and flavorful. It's also very quick.
