Fish Florentine

Ingredients

 

  • 4 oz filets of a white fish, halibut, tilapia, etc.
  • 1 tbsp extra virgin olive oil
  • 1 tbsp salted butter
  • 1 red bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 9 ounces fresh baby spinach
  • 2 ounces cream cheese
  • ¼ cup half & half
  • 3 tbsp parmesan cheese, grated fine
  • kosher salt
  • fresh black pepper

 

Instructions

 

Spinach: Start First

 

  1. In a large skillet on medium heat, add a spray of olive oil and 1/2 tbsp of butter. Bring to heat and add the bell pepper, and garlic, cooking for about 4 minutes.
  2. Add the spinach and season with salt and pepper. Stir around until the spinach has wilted.
  3. Add the cream cheese, half and half and the parmesan cheese. Stir frequently to combine, and use the back of a spoon to smash out the cream cheese if necessary. Turn heat to low while the fish cooks.

 

Fish

 

  1. Heat a medium skillet on medium heat, and add the remaining olive oil and butter.
  2. Season the fish by sprinkling with salt, pepper, and some smoked paprika. Cook for about 6 minutes on the first side, flip and cook for an additional 5. Make sure you fish is cooked through and it should be flakey and moist.
  3. To serve, plate the spinach and cream cheese mixture and place the fish filet on top.

Notes:

We have made this dish at least 20 times, and every single time it's perfect, and flavorful. It's also very quick.
