Beef and Broccoli
Prep time: 5 Min - Cook time: 25 Min - Total time: 30 Min - Serves 4 - Credit to Café Delites
Ingredients
Marinade:
- 1 lb beef tenderloin, sliced thin
- 2 tbsp water
- 1 tbsp low sodium soy sauce
- 1 tbsp Shaoxing (Chinese) wine** (substitute Rice Wine Vinegar)
- 2 tbsp cornstarch
Sauce:
- 1/2 cup low sodium soy sauce
- 2/3 cup water
- 1/3 cup brown sugar
- 2 tbsp hoisin sauce
- 1 tbsp oyster sauce (optional)
- 3/4 tbsp pepper
Stir Fry:
- 1/4 cup oil
- 1 tsp sesame oil
- 8 cloves (or 4 tablespoons) garlic, minced
- 4-5 cremini mushrooms, sliced
- 2 tsp minced ginger
- 1 head broccoli , cut into florets
- 4 green onions, thinly sliced
- 1 tbsp cornstarch mixed with 2 tbsp water
Instructions
- Whisk together the ingredients for the marinade, the pour over the beef and rest for 4 hours.
- Prepare the sauce by mixing all the ingredients together (a jar is great for this) and set aside.
- In your work (or fry pan) add any remaining oil (including the sesame oil) and bring the pan to high heat. Cook the tenderloin strips until cooked and slightly crispy. Remove from the pan and set aside.
- Add the vegetables and stir fry until just tender. Add the ginger and the garlic, and cook for 30 second to a minute. Add the beef back into the pan, then add the sauce. Cook for about 3 minutes, then add the cornstarch mixture to the pan and cook until the sauce thickens.
- Garnish with the green onion slices.
