Chile Heaven

Ingredients

 

  • 1 lb. ground beef
  • 1 lb. dry red beans
  • 1 smoked ham hock (sub with chopped bacon)
  • 4 plum tomatoes, chopped
  • 4 cups beef broth
  • 1/4 cup plain yogurt
  • 1 dried ancho chili
  • 1 yellow onion, chopped
  • 2 cloves garlic, grated
  • 1 bar of dark chocolate bar
  • 1/8 cup cocoa powder
  • 2 tbsp heavy cream
  • Olive oil
  • 1/2 tbsp coriander seeds, toasted, crushed
  • 1 tbsp masa harina
  • 1 bay leaf
  • 1/2 tsp ground cumin
  • Salt

 

Instructions

 

  1. Rinse the red beans, cover with cold water and soak overnight.
  1. Bring a small pot of water to boil, then add the ancho chili and soak for 20 minutes or until it's soft. Remove from the water the chop into small pieces.
  2. In a mixing bowl, add the ground beef, the chopped ancho and the heavy cream. Cover and refrigerate 4 hours or overnight.
  3. Drain the beans and set aside.
  4. In a large Dutch oven over medium heat, sauté the yellow onions for about 5 minutes until translucent. Add the ground beef, breaking it up as it cooks, then add the garlic, cocoa, coriander, masa harina, salt and the bay leaf. Stir to mix well.
  5. Turn the heat to medium high, add the drained beans, ham hocks, tomatoes, cumin and beef broth and bring to a boil, then lower to a simmer. Cover and cook for 1-2 hours. Check the beans for tenderness, adjust salt if necessary.
  6. Garnish with some cilantro, grated cheddar, and a spoonful of sour cream.

Notes:

 

Some of the best chili you will ever eat. It's an interesting technique to soak the meat in milk, but whatever works and this works!
