Hatch Chili Season is typically from mid-late August through September, so grab your hatch, give it a roast and settle in to a traditional New Mexico Dish that is satisfying, a bit spicy, and comfort food at it's finest.
CALABASIS
A traditional New Mexican food - it's fast, filling, and delicious!

Ingredients
- 1 lb ground beef (I used 90/10)
- 1 summer squash, sliced then chopped
- 1 green or yellow zucchini, sliced, then chopped
- 1/2 onion, chopped
- 3-4 hatch chiles, chopped (or used canned)
- 2 small potatoes, diced
- 1 tomato, chopped
- 2 cups beef broth
- 1 tbsp Knorr caldo de tomato (or 1 small can tomato sauce)
- Cilantro
Instructions
- Brown the ground beef until just starting to brown. Add the remaining vegetables and continue to cook for 3-4 minutes to soften.
- Add the broths, and tomato, a handful of cilantro and simmer for 30 minutes or so without a lid, so the sauce thickens just a bit.
- Serve with additional cilantro.
