Chicken and Sausage Gumbo

Ingredients

 

  • 1/3 cup oil
  • 3/4 cup AP flour
  • 3 peppers (your choice of color), diced
  • 2 stalks celery, diced
  • 4 cloves garlic, minced
  • 1 medium yellow onion, diced
  • 1 14 oz can fire roasted tomatoes
  • 1 tbsp dried oregano
  • 1 tbsp dried thyme
  • 1 tbsp dried basil
  • 1 tbsp creole seasonings
  • 1 tsp chili powder
  • 1 tsp cayenne pepper *optional
  • 6 cups chicken broth
  • 3 andouille sausage links, diced or sliced
  • 3 boneless skinless chicken thighs

 

  • Cooked Rice and Sliced Green Onions for Garnish

 

Instructions

 

  1. While I can't share exactly how to make this because it's from a book - and the whole copyright thing - you can figure it out as follows;
  2. Make a roux - sort of, but not fully.
  3. Add your mirepoix
  4. Add the chicken and sausage, cook for a bit, shred the chicken, adjust your seasonings.
