
Chicken and Sausage Gumbo

Ingredients
- 1/3 cup oil
- 3/4 cup AP flour
- 3 peppers (your choice of color), diced
- 2 stalks celery, diced
- 4 cloves garlic, minced
- 1 medium yellow onion, diced
- 1 14 oz can fire roasted tomatoes
- 1 tbsp dried oregano
- 1 tbsp dried thyme
- 1 tbsp dried basil
- 1 tbsp creole seasonings
- 1 tsp chili powder
- 1 tsp cayenne pepper *optional
- 6 cups chicken broth
- 3 andouille sausage links, diced or sliced
- 3 boneless skinless chicken thighs
- Cooked Rice and Sliced Green Onions for Garnish
Instructions
- While I can't share exactly how to make this because it's from a book - and the whole copyright thing - you can figure it out as follows;
- Make a roux - sort of, but not fully.
- Add your mirepoix
- Add the chicken and sausage, cook for a bit, shred the chicken, adjust your seasonings.
