
Chorizo and Potato Quiche

Ingredients
- Store bought or home made pie crust
- 4 eggs, beaten
- 1/4 cup milk
- 1 large potato, cut into small chunks
- 1 cup spinach (not necessary, but if you have a handful you need to use)
- 2 cup grated cheese (divided for filling and topping), muenster is what I had leftover
- 1 cup chorizo (again, leftover from taquitos)
- Salt, pepper
Instructions
- In a large mixing bowl, combine all of your ingredients, season with salt and pepper, making sure you leave 1 cup of the cheese for the topping and sprinkle on top after pouring the filling into the pie shell.
- Bake at 350 for 45 minutes until set.

Notes:
This was good - I just used the leftovers from the taquitos posted behind this. Added 4 eggs, and some cheese to a homemade pie crust.
