Chorizo and Potato Quiche

Ingredients

 

  • Store bought or home made pie crust
  • 4 eggs, beaten
  • 1/4 cup milk
  • 1 large potato, cut into small chunks
  • 1 cup spinach (not necessary, but if you have a handful you need to use)
  • 2 cup grated cheese (divided for filling and topping), muenster is what I had leftover
  • 1 cup chorizo (again, leftover from taquitos)
  • Salt, pepper

 

Instructions

 

  1. In a large mixing bowl, combine all of your ingredients, season with salt and pepper, making sure you leave 1 cup of the cheese for the topping and sprinkle on top after pouring the filling into the pie shell.
  2. Bake at 350 for 45 minutes until set.

Notes:

 

This was good - I just used the leftovers from the taquitos posted behind this.  Added 4 eggs, and some cheese to a homemade pie crust.
