Shrimp Cooked in Garlic Butter

Ingredients
- 1 lb. shrimp, peeled and deveined.
- 3 cloves garlic, minced.
- 3 tbsp unsalted butter, divided 1.5 tbsp each
- 2 tbsp olive oil
- 1 tbsp honey
- 1/8 tsp cayenne pepper
- 1 tbsp parsley, minced
- 1 tbsp lemon juice, either fresh squeezed or liquid
- salt and pepper to taste (usually 1/2 tsp each)
- optional: 1/2 tsp crushed red pepper flakes
Instructions
- Clean and devein the shrimp, and pat dry, set aside. Mix together in a small prep dish, the salt, pepper, cayenne.
- In other small prep dish, mix together the honey, olive oil, and lemon juice.
- Set aside.
- Place 1.5 tbsp of butter into a cast iron or other heavy bottomed pan over medium heat. Melt completely and let butter start to foam and turn brown.
- Add the shrimp, making sure all of the pieces are flat against the bottom.
- Turn heat to medium high.
- (Shrimp will cool the pan a bit, so this keeps it at a searing temperature.)
- Sprinkle the seasoning mix over the top and allow the shrimp to cook undisturbed for about 3 minutes until there is a nice crust on the bottom.
- Flip and cook for another 2 minutes.
- Stir in the honey, olive oil and lemon juice and add the remaining 1.5 tbsp of butter to the pan and stir everything together for an additional minute.
- Sprinkle your parsley over the top, and stir.
- Check for seasonings and adjust if necessary.
- Serve with angel hair pasta or your favorite. Spoon additional liquid from the cooking over the top and dig in!
