Zucchini Quiche with Smoked Gouda Cheese

Ingredients
- 3 zucchini, shredded, liquid squeezed out
- 1 large shallot, sliced super thin
- 4 slices bacon, diced and cooked crispy
- 1/4 cup or a small handful of chives
- 1/2 cup cheese of choice - Smoked Gouda here, but others including pepper jack or mozzarella are fine
- 2 tbsp grated Parmesan cheese (or more)
- 1/2 cup flour
- 1 tsp baking powder
- 2/3 milk (your choice)
- 1 tsp olive oil
- 2 large eggs, beaten
- 1/2 tsp kosher salt
- fresh cracked pepper to taste
Instructions
- Preheat the oven to 400, and spray a pie dish with cooking spray.
- Give the zucchini an extra squeeze, then add to a bowl along with the shallots, chives, and smoked gouda cheese. Stir to combine.
- In another small dish, add the flour, and baking powder into a bowl and using a dry whisk, combine evenly. Add the rest of the ingredients, milk, etc., and blend well with the flour mixture.
- Add the zucchini mixture, stir well, and pour into the dish. Top with parmesan and bake for 30-35 minutes until the center is set and is clean when checked with a knife.

When you garden and grow zucchini, even just one plant. You know. You have so much zucchini it's hard to use it all. In comes this quiche, it uses a lot! And it's delicious!
