Ingredients

 

  • 1 1/4 cup warm water
  • 2 1/4 tsp instant yeast
  • 1 tbsp granulated sugar
  • 1/2 cup olive oil
  • 1 tsp salt
  • 3 cups flour

 

Instructions

 

  1. In a medium sized bowl, add the warm water, yeast and just a pinch of the granulated sugar, stir and let rest for 10 minutes.
  2. Into a large size bowl, add the flour, salt, and the rest of the sugar and whisk to combine evenly. Stir in the yeast water. Using your hands, squeeze to combine the mixture until it has become the consistency that can be kneaded into a ball. Knead for 5 minutes.
  3. Dover the dough and allow it to rest in a warm spot for 20 minutes.
  4. Punch the dough down, and repeat the kneading/resting procedure 2 more times.
  5. Drizzle a sheet pan with some olive oil, then transfer the dough and gently stretch using your hands to try and fill the entire sheet. Cover with a towel and let rest for 2 hours.
  6. Preheat the oven to 400. Drizzle the top of the bread with additional olive oil, sprinkle with salt, and some fresh rosemary leaves. Bake for 20 minute or until golden brown. Cool for 20 minutes.
  7. Focaccia is best eaten the day it's made, so enjoy it. If you wish to use it to make some sandwiches, make your sandwich as you like, then wrap tightly in saran wrap and refrigerate.
