Chicken and Peppers with Penne

Ingredients
- 2 Boneless chicken breasts
- 1 red pepper, diced
- 8 oz (carton) of cherry tomatoes
- 2 tbsp tomato paste (we use the tubes)
- 1-1/2 cups penne pasta
- Fresh basil and parmesan for garnish
- 1 tbsp each olive oil and butter
- 1 tsp each salt, pepper, garlic powder
Instructions
- Bring a pot of water to boil, add salt when it reaches boiling, then add the pasta, stirring to prevent sticking. Follow package directions for time, usually about 10-12 minutes.
- Cut the chicken into bite size pieces, and begin sautéing with olive oil and butter. When the chicken is starting to brown, add the spices, then the peppers, tomato paste and cherry tomatoes. Continue cooking the chicken until it is completely done.
- Combine the mixture together, check the seasonings and add more if needed. Garnish with fresh basil

A Quick, simple and tasty dinner. We often make this when we have an excess of cherry tomatoes from the garden, or from the freezer. Sometimes, throw-down dinners are kind of the best. Use what you have, make it simple.
