Quick Breakfast Chalupas

Ingredients
- Chalupa Shells - Pre-Fried
- Refried Beans
- 2 eggs per Serving
- 1/2 avocado per chalupa
- Cilantro and Salsa for Serving
- Oil for cooking eggs
Instructions
- Heat your chalupa shells in an oven or toaster oven for about 2-3 minutes to warm.
- Heat the refried beans in a microwave safe dish, add a dash of water if you need to thin them a bit.
- Scramble your eggs (I will not give instructions for this), have your cilantro and avocado sliced, and a big spoon in your jar of salsa.

This is a great way to use up leftover refried beans. It's also incredible quick and satisfying. Our schedule is eggs on Saturday morning.
