Quick Breakfast Chalupas

Ingredients
 

  • Chalupa Shells - Pre-Fried
  • Refried Beans
  • 2 eggs per Serving
  • 1/2 avocado per chalupa
  • Cilantro and Salsa for Serving
  • Oil for cooking eggs

 

Instructions
 

  1. Heat your chalupa shells in an oven or toaster oven for about 2-3 minutes to warm.
  2. Heat the refried beans in a microwave safe dish, add a dash of water if you need to thin them a bit.
  3. Scramble your eggs (I will not give instructions for this), have your cilantro and avocado sliced, and a big spoon in your jar of salsa.

This is a great way to use up leftover refried beans. It's also incredible quick and satisfying. Our schedule is eggs on Saturday morning.
